About Roasting Coffee
Each roaster have her own philosophy and unique interpretation of what a good coffee should taste like. Our goal is to highlight the coffee's unique qualities, its natural sweetness and complexity by roasting the coffee with care and to let the terroir and the people behind it speak for themselves. Our roast style is often on the lighter side of what is commonly found here in Japan.
We roast manually on a professional drum-roaster. It is quite a hands-on process as we have to use all our senses while watching the coffee transforms and managing the heat that the beans receive.
At the same time, we use a data-logging software to help us track the different temperatures within the machine, so that we know exactly what is happening during a roast. This ensures that our targets are reached each time and where to improve upon for the next.
Coffee roasting is a long and difficult process to master but fun and rewarding. Each time we roast there is something new to learn and you can expect our coffees to only get better as we improve our skills and understanding of the craft.
