About Green Coffee

The coffee seed contains all the building blocks that will be transformed into flavourful components during roasting. We believe getting high quality green coffee is the first and most crucial step.

Our first criteria when selecting a coffee is the freshness of the coffee. Different regions around the globe harvest and process coffees at different months throughout the year. We keep looking for new arrivals from different importers to get our hands on raw coffees that have their potential intact.

Next is the flavors of the coffee. We favour fruity, floral, bright or complex coffees. These mainly come from the coffee variety such as Typica, Bourbon, Catura, to name a few but also the process (washed, natural, etc.), we carefully select coffees that fit a combination of criteria.

We also look for coffees that have something unique about them and we roast them accordingly to highlight this uniqueness, also known as the “terroir”. For us, this is what specialty coffee is about.

At the moment we choose importers that share my values and buy from them, but in the future we aim to be able to buy directly from farmers and do closer partnerships.
